Vegan Apple Pie Porridge
- 1 cup whole oats (traditional oats)
- 1 cup apple juice
- 1 cup water
- 2 large apples
- 1/2 teaspoon cinnamon
- 1 dash ginger
- 1 dash ground nutmeg
- 1 dash cardamom
- 5 large dates (any kind)
- 1 tablespoon flaxseed meal
- Dice apples into relatively small cubes or pieces and saute for 5-10 minutes with some apple juice, or cook them in the microwave instead.
In a pot mix oats, apple juice, water, diced apple, cinnamon, ginger, nutmeg and cardamom.
Place pot on stove and turn heat to high.
Bring to the boil while stirring, then turn down the heat.
Keep stirring over low heat for 5-10 minutes or until it thickens.
Turn off the heat and let it sit for five minutes.
Cut dates into small pieces, add to porridge and mix them together.
Serve porridge in a bowl and sprinkle flaxseed meal onto it or mix it in.
