- 1 cup medium-grain rice
- 2 1/2 cups water
- 90 gr tomato paste
- 1 small bay leaf
- 1 teaspoon black pepper
- 2 tablespoons chopped parsley
- 1 pinch salt ((to taste))
Put rice, water, tomato paste, bay leaf and black pepper in a pot.
Bring it to the boil, then reduce heat.
Give it a good stir and partially cover pot.
Let it cook over low heat for 15 minutes.
Take out the bay leaf and gently stir.
Partially cover pot and let it cook over low heat for 5 more minutes.
Add chopped parsley and gently stir.
Partially cover pot and let it cook for 5-15 more minutes over low heat.
