Vegan Okra Stew
- 2 medium tomatoes
- 400 grams okra
- 2 cups water
- 1 teaspoon black pepper
- 2 dashes salt
- 2 teaspoons corn starch
- Chop tomatoes and toss into a pot.
Add water, salt and black pepper.
Bring to the boil.
Turn down the heat and let it cook for 30 minutes while partially covering the pot.
Take 6 tablespoons of the liquid in the pot, put into a cup, add corn starch and thoroughly mix them together. Don’t leave any clumps.
Add the corn starch mixture to contents of pot and gently but thoroughly stir a couple of minutes or until it thickens.
