Okra Stew

Vegan Okra Stew

  • 2 medium tomatoes
  • 400 grams okra
  • 2 cups water
  • 1 teaspoon black pepper
  • 2 dashes salt
  • 2 teaspoons corn starch
  1. Chop tomatoes and toss into a pot.
  2. Add okra.

  3. Add water, salt and black pepper.

  4. Bring to the boil.

  5. Turn down the heat and let it cook for 30 minutes while partially covering the pot.

  6. Take 6 tablespoons of the liquid in the pot, put into a cup, add corn starch and thoroughly mix them together. Don’t leave any clumps.

  7. Add the corn starch mixture to contents of pot and gently but thoroughly stir a couple of minutes or until it thickens.

  8. Serve.
