Potato Wedges with Tomato Sauce

A quick way to feed yourself when you’re out of supplies or food items is to figure out what you have on hand and make use of it. The first time I made this dish I wanted to prepare something yummy that is also satiating, but I had run out of groceries and forgotten to go shopping. What I found though were potatoes, tomato paste, a couple of lemons and some spices. I’m sure you can guess what happened next! I then decided that I can just chop these potatoes up and whip up some sauce and VOILA!

Potato Wedges Ingredients

  • 3 medium potatoes
  • 2 tablespoon ground black pepper
  • 1 pinch salt (to taste)
  • You can add any other seasoning you like

Tomato Sauce Ingredients

  • 130 g about 7 tablespoons low sodium tomato paste
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1/2 teaspoon allspice seasoning
  • 1 tablespoon lemon juice
  • 1/4 cup water
  1. Preheat your oven to high heat.

  2. Cut potatoes into wedges and place on a non-stick oven tray or cover an oven tray with parchment paper and place potato wedges on it.

  3. Sprinkle your seasoning onto the wedges.

  4. Place the tray into oven and let wedges bake over high heat for 30-50 minutes or until they’re fully baked.

  5. Meanwhile you can prepare your sauce.

  6. In a bowl put tomato paste, onion powder, garlic powder, allspice seasoning, and lemon juice and mix them all together.

  7. Add some water to the mixture. If you want it to be more liquidy you’ll need to add more water but I usually just add about 1/4 cup water.

  8. Serve potato wedges with tomato sauce.
