This Vanilla Energy Balls Recipe is a fairly simple one. The peanuts I’m using here have been roasted. You can roast your own peanuts at home. Cover an oven-safe tray with parchment paper and spread your peanuts on it. Roast them in the oven for 15 minutes. It depends on your oven really, so keep an eye on them. These vanilla energy balls are also great as a per-workout snack. They make you want to jump around! You can make them when your friends are coming over as well. They’re perfect as finger food or just something to snack on while drinking tea.

Vanilla Energy Balls
- 3/4 cup whole oats
- 1/2 cup hot water
- 10 medjool dates
- 1/2 cup roasted peanuts
- 1 tsp vanilla essence
- 1 pinch ground cinnammon
- 1/2 cup grated coconut
- Toss oats in a bowl and add water. Mix them well together and let them sit for an hour or so.
- Pit dates and toss them into a food processor. Add peanuts, vanilla and cinnamon. Process them. You wouldn’t want to over-process them though. You want it to a be a dough that has some chunks in it.
- In a large bowl mix the soaked oats and the peanut and date dough together until they become one type of dough.
- Shape dough into balls and cover with coconut.
