This Vanilla Energy Balls Recipe is a fairly simple one. The peanuts I’m using here have been roasted. You can roast your own peanuts at home. Cover an oven-safe tray with parchment paper and spread your peanuts on it. Roast them in the oven for 15 minutes. It depends on your oven really, so keep an eye on them. These vanilla energy balls are also great as a per-workout snack. They make you want to jump around! You can make them when your friends are coming over as well. They’re perfect as finger food or just something to snack on while drinking tea.

Vegan Vanilla Energy Balls Recipe
- 3/4 cup whole oats
- 1/2 cup hot water
- 10 large medjool dates
- 1/2 cup roasted peanuts
- 1 teaspoon vanilla essence
- 1 pinch ground cinnamon
- 1/2 cup grated coconut
Toss oats in a bowl and add water. Mix them well together and microwave them for 3-4 minutes or until mushy.
Pit dates and toss them into a food processor. Add peanuts, vanilla and cinnamon. Process them until it's a dough that has some small chunks in it.
In a large bowl mix oats and peanut and date dough together until they become one type of dough.
- Shape dough into balls and cover with coconut.
