If you’re anything like me you probably start developing strange cravings sometimes. I wasn’t always vegan, and I do miss some non-vegan foods. I know they’re bad for me now, and I wouldn’t eat them, but this such a situation calls for experimentation. Dairy yogurt is somewhat creamy, smooth and a bit sour. Hence, I choose the avocado to add creaminess, the tofu to be the base and lemon juice to make it sour. It turned out great when I first made this vegan yogurt fruit salad. Fruits, of course, are a major staple of a healthy vegan diet. They are delicious and nutritious, they’re also great ingredients in so many recipes.
This yogurt fruit salad recipe is super easy and quick to make. You can use any type of fruit you’d like. Just make sure your fruit is ripe otherwise this salad won’t taste so great. It goes perfectly with dates and mangos. You can omit the vanilla essence if you don’t like the taste, but it tastes glorious if you ask me.
A great addition to this salad are ground nuts and seeds. Here, I used fudge crumbs. Ground flaxseed goes great with it as well. This vegan yogurt fruit salad isn’t necessarily low in fat, but it’s a great treat. If you want a low fat version you can use less avocado and tofu. But it’s highly unlikely that it’ll do any damage if you have it occasionally.

Ingredients 2 cup firm tofu (cubes) 1 large avocado 2 tablespoons vanilla essence 1 cup water, divided 1/2 cup lemon juice, divided 10 large dates 1 large mango 1 large pear 1 large apple 2 medium bananas
Instructions 1- Add tofu, avocado, vanilla essence, 1/2 cup of water and 2 tablespoons of lemon juice into a blender or food processor and process until a yogurt consistency is reached. 2- In a large bowl pour the remaining lemon juice and water. 3- Chop fruit and dump into lemon juice and water bowl. 4- When all fruit is chopped mix fruit well in the lemon and water mixture and then drain and assemble into a serving bowl with yogurt. 5- Garnish with ground flaxseed or any type of nuts or seeds. 6- Serve.
